Glycoside hydrolase that rapidly hydrolyzes short-chain cellodextrins to yield either cellobiose or cellobiose and glucose as end products; cellobiose is not hydrolyzed further. Also shows limited activity against endoglucanase specific substrates (carboxymethylcellulose (CMC), lichenan, laminarin and xylan).
