Cleaves zeaxanthin symmetrically at the 7-8 and 7'-8' double bonds to produce crocetin dialdehyde and hydroxy-beta-cyclocitral, two water-soluble precursors sequestred in vacuoles and involved in the synthesis of saffron pigment and aroma.
